Making Banana Pancakes...

Anyone who knows me knows that I am an inordinately huge fan of all things carbohydrate-based. Pancakes are one of my favorite things. I will eat them hot, cold, with peanut butter, on a plate, as I drive. Wherever. They also make really good running fuel, at least for me. So without further commentary...

Banana Walnut Oatmeal Pancakes
Makes 12-14 pancakes

1 1/2 cup flour
1/2 cup quick cooking oats
2 tbsp sugar
4 tsp baking powder
1 tsp salt
Cinnamon - I usually just shake a bunch in
Walnut pieces - a lot or a little
1 3/4 c milk
2 bananas mashed
Couple tbsp vegetable oil
1 egg, well beaten

Mix all your dry ingredients together
Blend your wet ingredients then add to dry mixture. Stir until just blended - it should be a little lumpy.

While you're mixing your batter, heat a griddle and coat with cooking spray or a little vegetable oil. When the griddle is hot enough, drops of cold water will sizzle on it.

Pour about 1/4 batter for each pancake. Flip when they look dry around the edges and there are small bubbles on the top...or when they start to smell like they're burning.

I'd post a picture except I ate them all. On the plus side, they're fairly healthy since I replaced all the oil with banana. If you want the non-healthy version, take out banana and use 1/3 cup oil.
